Al Maldonado, the son of a Peruvian Military attaché to Washington D.C., has always valued family and food. Before, coming to the states 24 years ago, Al grew up in Peru, surrounded by a unique variety of gastronomic influences, with family members having rich culinary traditions from Latin America, Cuba, Italy and more. As it stands currently, the majority of recipes and flavor profiles utilized by Al, are unique to his family line, that have been passed down through generations.
After, spending some time in the business world, Al realized that he must devote all his vocational time and energy to his passion for food. As Al began to follow his heart, he met and married his soul mate, Sara, which was later followed by the addition of their lovely daughter Sophia. Sara, being a chef in her own right, and being from Torreon, Mexico, brings another layer to the fusion inspirations that Al incorporates into all his cooking. In 2009, when Al first came to Boerne, he realized it was the perfect place to share his culinary passion, being that he saw the town “like a big family that loves food.” Ever since then, he has endeavored to grow the Chilito's family, one bite at a time, household-to-household, and generation-to-generation, throughout the entire Hill country.
